Description
Raw, unfiltered bee honey from Sri Lankan hives, mostly forest-edge and home garden. It runs thinner and darker than the thick blond honey most shops sell, tastes of whatever was flowering that season, and is bottled without heating so it keeps its aroma.
Sri Lankan honey does not look like the honey in a squeezy bottle, and that puts some people off before they taste it. It is darker, thinner, and it varies from batch to batch because the bees work whatever is in flower.
That variation is the whole appeal. A jar from a forest edge tastes of the trees around it, and no two seasons are quite the same. Blended commercial honey is consistent precisely because it has been mixed and heated until nothing stands out.
We bottle it raw and unheated, so it may crystallise, cloud or separate. All three are signs of honey that has been left alone.
How to Use
- Spoon over curd or plain yoghurt
- Stir into a herbal tea once it has cooled a little
- Drizzle over a milk hopper
- Use in a marinade with lime and chilli
