Description

Spray-dried Sri Lankan coconut milk in a resealable pouch. Mixes to a thin second-extraction milk for simmering a curry, or thicker if you cut the water. This is the workhorse of the coconut shelf rather than the rich end of it.

A tin of coconut milk is fine until you open it. After that you have four days and a fridge shelf with half a tin sweating on it, and most of the time the second half goes in the bin.

Powder does not have that problem. Measure what the pot needs, seal the pouch, and the rest waits. For anybody cooking Sri Lankan food two or three times a week, that alone is worth the switch.

It is the workhorse rather than the rich end of the coconut shelf. For the thick finishing pour a curry gets at the end, the cream powder is the one to reach for.

How to Use

  • One part powder to four parts warm water for simmering a curry
  • Cut the water by half for the thick finishing milk
  • Whisk into rice water for coconut rice
  • Keep a pouch for hoppers and string hopper batter

Around 100g of powder made up to 400ml with warm water gives you roughly what a standard tin holds. Sri Lankan cooking rarely wants tin-strength milk throughout though, so use it thinner for the simmering and thicker at the end.
