Description

Kithul hakuru is jaggery set from the sap of the kithul palm. It carries a dark caramel, almost smoky sweetness that plain sugar cannot match. Grate it over curd, melt it into sweets, or sweeten your tea the old way.

Kithul hakuru, kithul palm jaggery in English, comes from sap tapped high in the kithul palm by toddy tappers who climb the same trees their grandfathers did.

The sap is boiled down slowly until it sets into firm, fragrant blocks the colour of dark toffee. A piece grated over a bowl of buffalo curd is one of the simplest and best things you can eat on the island.

It is the sweetener behind watalappam, kavum and a hundred home sweets, and it turns an ordinary cup of tea into something that tastes of the village.

How to Use

  • Grate over buffalo curd or yoghurt
  • Melt into watalappam, kavum and pani walalu
  • Sweeten tea and coffee
  • Use in place of brown sugar in baking
