Coconut Milk
Coconut milk is pressed from grated coconut flesh, and at home you get two grades: thin milk from the second press for cooking, thick milk from the first press for finishing. If you're cooking outside Sri Lanka, full-fat tinned coconut milk does the job beautifully. Use the watery part as thin milk and the thick cream on top as your rich finish. It carries spice, calms heat and gives Sri Lankan curries their signature body.
