Description

Raw Sri Lankan bee honey infused with true Ceylon cinnamon (Cinnamomum verum), not cassia. The cinnamon steeps in slowly rather than being stirred in as a powder, so the honey stays clear and takes on a warm, sweet spice note without any grittiness.

Two things Sri Lanka is genuinely known for, put in the same jar. It sounds like a marketing idea and it is actually an old household one: a piece of cinnamon quill left standing in the honey pot.

The distinction that matters is which cinnamon. True Ceylon cinnamon is sweet and mellow, and it is naturally low in coumarin. Cassia, the hard dark bark sold as cinnamon almost everywhere else, is harsher and much higher in coumarin. This is the first one, and it is worth knowing the difference before buying any cinnamon product.

Infusing rather than blending keeps the honey pourable and clear. Powder would make it gritty and cloudy, and the flavour would be blunter for it.
