Description

Raw Sri Lankan honey infused with ginger, black pepper and a small measure of island herbs. It is warmer and sharper than plain honey, with a peppery finish that catches the back of the throat, and it is the jar households reach for on a cold, wet evening.

Every Sri Lankan household has a version of this, and no two are quite the same. Honey in a jar, with ginger, pepper and whatever herbs the family swears by, left to steep.

Ours keeps to the common ground: ginger for warmth, black pepper for the catch at the back of the throat, and a restrained hand with the herbs so it still tastes like honey rather than a decoction.

It works as a spoonful on its own, and it works stirred into a cup of belimal or ginger tea. What it is not is a treatment, and anybody selling it that way is going further than they should.

How to Use

  • Take a spoonful on a cold, wet evening
  • Stir into belimal or ginger tea once it has cooled a little
  • Whisk into a lime and soda over ice
  • Brush over roast chicken in the last five minutes
