Description
Sri Lankan cashews, peanuts and fried chickpeas tossed while still hot with chilli, curry leaves, salt and a small amount of sugar, so the coating turns glossy and sticks. This is the bowl that appears with drinks at every Sri Lankan gathering.
Devilled cashews are the famous version, and the mixed bowl is what actually gets put out. Cashew alone is expensive, so the peanuts and fried chickpeas stretch it and add two more textures at the same time.
The technique is in the timing. The nuts come out of the pan hot, the seasoning goes on immediately, and the small amount of sugar melts and sets into a thin glaze that holds the chilli and the curry leaves on.
Curry leaves are fried until they go brittle and are left in. Anybody picking them out has not tried one.
How to Use
- Put a bowl out with drinks
- Crush over a devilled dish for extra crunch
- Take a bag to somebody's house instead of wine
