Description
Thin slices of young green jackfruit, fried until they crisp and lightly salted. They snap like a good crisp, taste savoury and faintly starchy rather than fruity, and they are one of the oldest snack foods on the island.
People hear jackfruit and expect something sweet. Green jackfruit is not sweet at all. It is starchy and savoury, closer to a potato or a plantain, which is why it also gets curried as polos.
Sliced thin and fried, it behaves exactly like a root vegetable crisp: it goes rigid, snaps cleanly and takes salt well.
They are fried in coconut oil, which gives a faint sweetness at the edge of the taste that sunflower oil does not.
How to Use
- Eat them with a cup of plain tea
- Crush over a rice and curry plate for crunch
- Serve with drinks instead of crisps
- Pack them for a long journey, they travel well
