Description
Broad chips shaved from mature coconut and toasted until the edges catch and go golden. They snap rather than bend, taste far more of coconut than the desiccated kind ever does, and disappear from a bowl faster than anybody plans.
Desiccated coconut is shredded and dried and mostly there to disappear into a mixture. Chips are the opposite: cut wide and thin so there is something to bite, and toasted so the sugars in the flesh brown and the taste concentrates.
Toasting is the whole trick and it is easy to overdo. A shade past golden and the whole batch tastes scorched, which is why they get watched rather than timed.
Eat them from the bag, scatter them over curd and treacle, or throw a handful over a curry at the table the way roasted coconut gets used in the north.
