Why This Plan Works
Why this plan works: it is built the way a Sri Lankan feast has always been built, around one fragrant pot of rice surrounded by many bowls of contrast. The golden yellow rice, scented with whole spices and pandan and dotted with cashews and raisins, is the calm centre. Against it you set a trio of curries that each pull in a different direction: a rich, deeply spiced chicken curry; a tangy, goraka-sharp fish curry; and a mellow, creamy cashew curry that gives anyone who wants a break from heat somewhere soft to land. Nothing competes, because each dish owns its own corner of the table.
The textures are doing as much work as the flavours. Tender braised meat and flaky fish sit beside the almost buttery bite of cashews, while the fried eggplant moju brings something sweet, sour and glossy that wakes the whole plate up. Fresh pol sambol scatters bright coconut, lime and chilli over everything as the finishing note. Then watalappam closes the meal on a cool, wobbling, jaggery-dark custard that feels like a reward after all that spice. It is a spread that rewards a little of everything rather than a lot of one thing, which is exactly how it is meant to be eaten.

Almost everything improves with a night in the fridge: the curries deepen, the moju mellows, and the watalappam sets properly when chilled overnight.
