Description
A kit for making Sri Lankan pickles rather than buying them: the whole spices, the mustard, the chilli and the vinegar base for achcharu and malay pickle, with jars and a card. You bring the fruit and vegetables, which is the part that has to be local and fresh.
Sri Lankan pickle is not a chutney and it is not a relish. Achcharu is sharp, hot and crunchy, and malay pickle is sweeter and mustard-heavy, and both live in a jar in the fridge door being eaten a spoonful at a time.
Making them is genuinely easy and mostly about waiting. The vegetables get salted, the spices get ground, the vinegar gets boiled with sugar, and then everything sits for a few days while the flavours settle.
The reason to make rather than buy is that you choose the vegetables. Carrot, green chilli, onion, unripe mango, ambarella, whatever is good where you are. That is why the kit contains no fruit or vegetable at all.

How to Use

Because pickle is only as good as what goes in it, and that has to be fresh and local to you. Carrot, green chilli, onion, unripe mango and ambarella all work. Shipping vegetables round the world to be pickled at the other end makes no sense.
