Description

Everything dry that a proper rice and curry plate needs, chosen so nothing in the box is left over unused. Nadu rice, roasted and unroasted curry powder, a tempering mix, goraka, Maldive fish, dhal and a card that plans the plate in the order a Sri Lankan cook would actually cook it.

Rice and curry is not one dish, it is five or six cooked around the same rice, and that is what makes it daunting from a standing start. The shopping list alone runs to twenty things, and half of them are unfamiliar.

So the box is built backwards from one specific plate: rice, a dhal, a fish or chicken curry, a mallum and a sambol. Every item in it appears in at least two of those, which is why there is no jar left half used at the end.

What is not in the box is the fresh half: coconut, lime, onion, curry leaves, chilli, and whatever protein you choose. Those come from a shop wherever you are, and the card says which of them can be substituted and which cannot.

The fresh half: a coconut, limes, onions, garlic, green chilli, curry leaves if you can get them, and whatever protein you want. The box holds the dry and hard-to-find things, because fresh coconut in a parcel would arrive as a problem rather than an ingredient.
