Why this plan works: it gives you a full Sri Lankan plate without asking you to juggle ten pots or hunt down anything obscure. Three dishes do the heavy lifting. A chicken curry built on roasted curry powder and coconut milk gives you the savoury, lightly spiced centre. A pot of red-lentil dhal turns soft and creamy and quietly ties everything else together. And pol sambol, freshly grated coconut tossed with chilli, lime and onion, lands on top of it all with a bright, sharp lift. Each one teaches a core technique you will reuse in almost every Sri Lankan meal you ever cook.

The reason it tastes balanced is that the dishes were chosen to play off each other.
