Description

A ready blend for pittu: roasted rice flour with the coconut ratio already accounted for, so you only need to add water, salt and grated coconut, work it to a crumb and steam it. Available in white and red rice versions, and both behave the same in the mould.

Pittu is flour, water, salt and coconut, and it is still the dish people get wrong most often. Everything depends on the crumb. Too dry and it stays powdery in the steamer. Too wet and it collapses into a paste.

The test is old and it works: squeeze a handful. If it holds its shape and then breaks apart cleanly when you press it, the water is right. If it stays in a lump, you have gone too far.

Roasting the flour first is the step home cooks skip, and it is exactly what gives pittu its warm, nutty smell. This mix is already roasted, which saves the twenty minutes of standing over a pan.

How to Use

  • Rub with water to a crumb, layer with coconut and steam
  • Serve with a hot fish curry or seeni sambol
  • Eat with banana and coconut treacle for breakfast
  • Steam in a metal mould if you have no bamboo one
