Description

Ripe Sri Lankan pineapple cooked down into a bright, chunky jam with a small amount of chilli and a strip of pandan in the pot. The heat is gentle and sits behind the sweetness rather than on top of it, which is how the island treats pineapple in general.

Sri Lanka does not treat pineapple as purely sweet. Cut fruit is sold at the roadside with salt and chilli powder shaken over it, and pineapple curry is a real dish with mustard and coconut milk in it.

So this jam follows the same instinct. Ripe fruit, jaggery and sugar, a strip of pandan, and just enough chilli to make you look at the label a second time.

It is chunky rather than smooth, because pineapple that has been boiled to a purée loses the thing that made it worth cooking.

How to Use

  • On toast or a bakery bun
  • With a hard cheese on a board
  • Glazed over roast pork in the last ten minutes
  • Spooned over ice cream or curd

Mildly. It arrives after the sweetness rather than with it, as a warmth at the back rather than a burn. Children generally eat it without comment. If you want no heat at all, this is not the jar.
