A Sri Lankan morning shelf is a small row of jars, and nobody uses all of them every day. One goes into the porridge, one into hot water, one gets forgotten for a month and then rediscovered.

The four here are the ones people ask about most, and they are deliberately different from each other. Moringa is peppery and deep green. Gotu kola is grassy and bitter. Welpenela is mild enough to drink plain. Hathawariya is a root, pale and faintly sweet, and behaves nothing like the other three.

The card matters as much as the powders. Handed four green pouches with no instructions, most people stir a spoon into water, pull a face, and never open them again. Cooked into a kenda with coconut milk, they are a different proposition entirely.
