Lamprais

Lamprais, also written lump rice or lomprijst, is the dish that sums up Sri Lankan Dutch Burgher cooking: rice cooked in meat stock, a special mixed-meat curry, a fried ash-plantain curry, seeni sambol, a frikkadel meatball and a pungent blachan, all wrapped in a banana leaf and baked together. It takes a day or two to make properly, but the moment you open a warm parcel and that layered, smoky aroma rises up, you get why it is such a beloved festive dish.

Uru Mas Curry

Sri Lankan Pork Curry

Uru mas curry is Sri Lankan pork cooked low and slow with roasted curry powder, plenty of black pepper and sour goraka until the meat goes meltingly tender and the gravy turns dark, thick and glossy. People call it black pork curry for that near-mahogany colour, and it's a real fixture in Burgher and Christian Sri Lankan kitchens, especially at Christmas. Bold, tangy and properly peppery, it rewards patience and tastes even better the next day.
